Artichoke Chicken Salad

This delightfully different chicken salad uses wild rice to add flavor and yogurt for its tangy taste and to lighten the mayonnaise.

Ingredients

    4grilled, boneless skinless chicken breasts, diced
    3green onions, chopped
    3/4 cuppitted black olives, chopped
    5plain or marinated artichoke hearts, chopped
    2 cupscooked wild rice
    1/3 cupmayonnaise
    1/3 cuplowfat plain yogurt
    1/8 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

In a large bowl, toss chicken with green onions, olive, artichoke hearts and wild rice. 


Add mayonnaise and yogurt, and stir to coat. 


Taste and adjust seasoning with salt and pepper.
