Asian Chicken Salad

This Asian-inspired salad is easy and full of flavor, combining crunchy cashews with sweet oranges and baby corn. It's perfect for potlucks or summer dinners. For even faster prep, use a cooked rotisserie chicken.

Ingredients

    1 poundboneless, skinless chicken breasts
    1 tablespooncanola oil
    1/4 teaspoonfine sea salt
    1/4 cuplemon tahini dressing
    1 tablespoontoasted sesame oil
    3 tablespoonsrice vinegar
    1 can (11-ounce)mandarin oranges, drained
    6 piecesbaby corn, quartered
    3green onions, chopped
    2 cupsfinely sliced Chinese Napa cabbage
    2/3 cuproasted and salted cashews
    1/8 teaspoonground black pepper

Method

Preheat the oven to 400°F.


Brush chicken breasts with oil and season with salt and pepper.


Bake 20-25 minutes.


Let cool and cut into 1/2-inch pieces.


In a medium bowl, whisk together salad dressing, sesame oil and vinegar.


Add chicken to bowl, stir to coat and then gently toss together with oranges, corn and scallions.


Place cabbage on a large platter and top with chicken mixture and roasted cashews.
