Avocado Lime Vinaigrette

Smooth, buttery avocado becomes a bright, tangy dressing that’s perfect for summer salads or a cooling dip for a spicy snack. Increase the level of heat by including some of the jalapeño ribs and seeds.

Ingredients
- 1 avocado
- 1/3 cup fresh lime juice (from about 2 1/2 limes)
- 1 teaspoon grated lime zest (from 1 lime)
- 1 cup lightly packed fresh cilantro
- 1 jalapeño pepper, seeded and chopped (about 3 tablespoons)
- 1/2 teaspoon ground cumin
Method
Combine avocado, zest, juice, cilantro, jalapeño, cumin and 1/2 cup water in a blender or food processor.
Purée until smooth.
Add more water 1 tablespoon at a time, if needed, to reach desired consistency.
Refrigerate in an airtight container for up to 3 days.
