Serve these rich scallops as an hors d'oeuvre or appetizer, or arrange them over pasta or rice pilaf for an elegant lunch or dinner.

Method
Lightly coat a baking sheet with spray oil.
Place scallops flat on a work surface.
Cut each one almost in half horizontally, leaving one side attached.
Place a small sliver of blue cheese in the middle and top with a dab of fig spread.
Close scallop.
Wrap a slice of bacon around the outside of scallop, secure with toothpicks and place on the prepared baking sheet.
Repeat with remaining scallops and season with pepper.
Preheat the broiler.
Broil scallops for 4 to 5 minutes per side, turning carefully, until bacon is browned and scallops are cooked through.
Remove toothpicks and serve with additional fig spread if desired.
