Baked Fries
Makes 6 to 8 servings

Serve these oil-free fries with your favorite veggie burgers. Reheat leftovers for use in breakfast tacos or even to top a green salad.

Ingredients
- 2 pounds potatoes (sweet or Russet)
- 2 tablespoons low-sodium vegetable broth
- 4 cloves garlic, finely chopped
- 2 teaspoons onion powder
- 1/2 teaspoon seasoning of choice (such as chili powder or curry powder)
Method
Preheat the oven to 400°F.
Line 2 rimmed baking sheets with parchment paper.
Slice potatoes into thin matchsticks and place in a large bowl with broth. Toss until coated.
Add garlic, onion powder and seasoning and toss until evenly coated. Place potatoes in a single layer on prepared baking sheets.
Bake 15 minutes. Flip potatoes and continue to bake until tender and crisp on the outside, 15 to 20 minutes.
