Beet and Mint Slaw

Serve this colorful slaw at summer cookouts alongside your favorite grilled foods. Use both varieties of beets for beautiful color and flavor.

Ingredients

    3 1/2 tablespoonsrice vinegar
    5 teaspoonswhite miso paste
    1/2 teaspoonground black pepper
    3/4 cupraisins
    3red or golden beets, peeled and grated
    1fennel bulb, fronds and bulb thinly sliced
    1 bunchgreen onions, chopped
    2/3 cupfresh mint leaves, sliced

Method

In a large bowl, whisk together vinegar, miso and pepper.


Soak raisins in boiling water to cover 5 minutes; drain and add to bowl.


Add beets, fennel, green onions and mint; toss to coat.
