Blueberry and Oat Purée
Makes about 2 cups

We bet that grown-ups will sneak a spoonful of this purée, which is chock-full of blueberries and enriched with coconut milk.

Ingredients
- 1 cup rolled oats
- 1/2 cup blueberries
- 1/2 cup full-fat coconut milk
Method
Combine oats and 1 3/4 cups water in a small saucepan and bring to a boil. Lower heat to medium-low and simmer, stirring often, until oats are thickened, 2 to 3 minutes. Stir in blueberries and cook until very thick, about 2 minutes more.
Carefully transfer oat mixture to a food processor and pulse until coarsely chopped. With the motor running, drizzle in coconut milk and purée until well combined.
The purée will keep refrigerated in an airtight container for up to 3 days or in the freezer for up to 3 months.
