Blueberry Mint Lemonade

Simple syrup is a combination of water and sugar cooked until the sugar dissolves. It is handy to have around for making a batch of lemonade. Make more than you need and keep in the refrigerator for cocktails or to sweeten iced coffee or tea. Recipe from our friends at Driscoll's Berries.

Ingredients
- 1 cup sugar
- 2 cups cold water, divided
- 1 cup lightly packed fresh mint leaves
- 1 cup fresh lemon juice
- 2 (6.0-ounce) packages Driscoll's Blueberries, divided
- 1 cup ice cubes
- Seltzer or soda water (optional)
Method
In a small saucepan, combine sugar, ½ cup water, 1 package blueberries and mint.
Bring to a simmer over medium heat, stirring occasionally until sugar dissolves, 3–6 minutes.
Gently mash berries with the back of a wooden spoon.
Remove from heat and cool to room temperature.
Strain blueberry simple syrup through a fine mesh sieve into a tall pitcher and discard solids.
Stir in lemon juice and remaining 1½ cups water. Refrigerate until cold.
To serve, add ice cubes to 4 tall glasses.
Top each glass with several blueberries and divide lemonade between glasses.
Top with seltzer water, if desired, and serve.
