Braised Chicken with Mangoes

Serve this sweet-and-savory braised chicken over rice, garnished with chives, if you wish. It's a great way to feature mangoes in a new way.

Ingredients
- 1 1/2 tablespoon extra-virgin olive oil
- 1 red onion, roughly chopped
- 8 boneless, skinless chicken thighs, cut into 2-inch pieces
- 4 cloves garlic, chopped
- 1 teaspoon fine sea salt
- 1 cup dry white wine (such as chardonnay)
- 1/2 cup low-sodium chicken broth
- 2 ripe but firm mangoes, cut into 1-inch chunks
Method
Heat oil in a large pot over medium-high heat.
Add onion and cook, stirring occasionally, until golden brown, 8 to 10 minutes.
Add chicken, garlic and salt; continue cooking until starting to brown and most juices are cooked away, about 15 minutes more.
Add wine and cook, scraping up any browned bits, until reduced by half.
Stir in broth and mangoes; bring to a boil.
Cover, reduce heat to medium-low and simmer until chicken is cooked through, about 25 minutes.
