Braised Pineapple with Star Anise and Ginger
Serves 6 to 8
Time 40 min
Pineapple braised in its own juice creates a memorable (and super simple) dessert. Star anise and ginger infuse the braising liquid, which reduces to a thick syrup.
Special Diets:
Ingredients
- 1 1/2 cup pineapple juice
- 4 whole star anise
- 2-inch piece fresh ginger, cut into thin slices
- 1 large pineapple, quartered lengthwise, core removed, cut into 1/2-inch thick slices
Method
In a large high-sided skillet, combine pineapple juice, star anise and ginger; bring to a boil over medium-high heat.
Add pineapple slices, reduce heat to medium-low, cover and cook, stirring several times, until pineapple is very tender, about 30 minutes.
Uncover and transfer pineapple slices to a serving platter.
Increase heat to medium-high and bring braising liquid to a boil.
Cook, stirring frequently, until reduced to a syrup, about 3 minutes.
Pour over pineapple to serve immediately or chill until ready to serve and enjoy cold.
