Broiled Pineapple with Ginger and Basil

Broiling or grilling slices of pineapple caramelizes the natural sugars in the fruit, and when tossed with fresh herbs and ginger becomes a sweet dessert treat. Serve with your favorite sorbet or nice cream for a hot-and-cold dessert with tropical flavors.

Ingredients

    1whole pineapple
    1 teaspoongrated fresh ginger
    2 teaspoonsthinly sliced fresh Thai basil, regular basil or mint

Method

Preheat the broiler to 500°F.


Trim and remove skin from pineapple.


Cut into long spears or round disks.


Place pineapple pieces on a large baking sheet.


Place under the broiler and cook until fruit starts to caramelize, 12 to 15 minutes, flipping halfway through. Remove from the oven and let cool slightly.


Cut pineapple into bite-size pieces.


Toss with ginger and basil, and serve warm.
