Cowgirl Creamery developed their Organic Buckaroo Cheese in 2010 to celebrate Whole Foods Market's 30th birthday. Here we celebrate its great flavor in a light 21st-century update to the casseroles of yesteryear.

Ingredients

    1 cupgrated Cowgirl Creamery Organic Buckaroo or UnieKaas Robusto cheese
    25365 Everyday Value® Organic Wheat Square Crackers, crushed
    1/4 cupchopped fresh parsley
    1/4 mediumred onion, finely chopped
    1 tablespoonchopped fresh thyme
    3summer squash, such as zucchini or yellow squash, cut into 1/2-inch-thick rounds
    1 tablespoonextra-virgin olive oil
    1 tablespoonlime juice
    1/2 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Preheat the oven to 425°F. 


In a medium bowl, toss together cheese, cracker crumbs, parsley, onion and thyme. 


In a large bowl, toss together zucchini, oil, lime juice, salt and pepper. 


Arrange squash in a 9x13-inch casserole dish. 


Scatter cheese mixture evenly over the top and bake until melted and golden brown and squash is just tender, about 20 minutes.
