Buffalo Cauliflower “Wings”

Buffalo Cauliflower “Wings”

With a spicy, thin batter to coat the cauliflower, oven baking these produces a crisp exterior ready to soak up even more hot sauce. If you have an air fryer, air fry in a lightly greased basket at 375°F for 15 minutes — they’ll be even crispier! For best results, bake the cauliflower right before serving.

Ingredients

    1 largehead of cauliflower, cut into large 2" florets
    3/4 cuppotato starch or brown rice flour
    2 teaspoonsbaking powder
    2 teaspoonsgranulated garlic
    1 teaspoonground paprika (sweet)
    1 teaspoonkosher salt
    1/2 teaspoonground cayenne pepper
    1/2 teaspoonground black pepper
    1/4 cupwater
    2 tablespoonshot sauce (such as Frank’s RedHot), plus extra for serving
    2 tablespoonssnipped chives, for serving (optional)
    Ranch or blue cheese dressing, for serving
    Carrot and celery sticks, for serving

Method

Preheat oven to 425°F and line two baking sheets with parchment paper.


In a large bowl, whisk together potato starch, baking powder, granulated garlic, paprika, salt, cayenne, black pepper, water and hot sauce until smooth.


Add florets to the batter and toss to evenly coat (using clean hands is the easiest). Transfer florets piece by piece to the prepared baking sheets to avoid transferring extra batter. Leave space between the florets so air can circulate around them.


Bake for 15 minutes, then flip pieces over and bake 15 minutes more, or until lightly browned.


Top with extra hot sauce (if desired) and serve immediately with ranch dressing, carrots and celery.
