Build-Your-Own Taco Dinner

For kids who like to get involved in making dinner, this is a great recipe. Set everything out in individual bowls for easy grabbing.

Ingredients

    1 tablespooncanola oil
    1 poundground beef or ground dark meat turkey
    2 tablespoonsSouthwest grill seasoning
    1 cupmild or medium salsa, divided
    1 cupshredded Monterey jack cheese
    1 largetomato, chopped
    1romaine lettuce heart, sliced crosswise into ribbons
    1 smallred onion, chopped
    1/2 cupfull-fat plain yogurt
    1lime, cut into wedges
    12warm corn tortillas

Method

Warm oil in a large skillet over medium high heat.


Add beef and seasoning and cook, stirring to break up the beef, until it browns, about 5 minutes.


Stir in 1/2 cup of the salsa, lower the heat and let it simmer another 5 minutes.


Spoon beef into a small serving bowl.


Put remaining 1/2 cup salsa, cheese, tomatoes, lettuce, onions, yogurt and lime wedges into bowls.


Serve alongside tortillas and beef so that everyone can build their own tacos.
