Build-Your-Own Taco Dinner

For kids who like to get involved in making dinner, this is a great recipe. Set everything out in individual bowls for easy grabbing.

Ingredients
- 1 tablespoon canola oil
- 1 pound ground beef or ground dark meat turkey
- 2 tablespoons Southwest grill seasoning
- 1 cup mild or medium salsa, divided
- 1 cup shredded Monterey jack cheese
- 1 large tomato, chopped
- 1 romaine lettuce heart, sliced crosswise into ribbons
- 1 small red onion, chopped
- 1/2 cup full-fat plain yogurt
- 1 lime, cut into wedges
- 12 warm corn tortillas
Method
Warm oil in a large skillet over medium high heat.
Add beef and seasoning and cook, stirring to break up the beef, until it browns, about 5 minutes.
Stir in 1/2 cup of the salsa, lower the heat and let it simmer another 5 minutes.
Spoon beef into a small serving bowl.
Put remaining 1/2 cup salsa, cheese, tomatoes, lettuce, onions, yogurt and lime wedges into bowls.
Serve alongside tortillas and beef so that everyone can build their own tacos.
