Carrot and Cheddar Grilled Cheese

Super-thin slices of carrot melt right into the cheese in this comfort classic that boasts a boosted nutritional profile.

Ingredients
- 2 medium carrots
- 8 slices whole grain bread
- 8 slices Cheddar cheese
- Olive or canola spray oil
Method
With a vegetable peeler, cut lengthwise carrot ribbons from carrots.
Lay 4 bread slices onto a work surface.
Top each with 1 slice cheese.
Arrange carrot ribbons evenly in a double layer on top of cheese.
Top carrots with an additional slice of cheese and bread.
Spray both sides of each sandwich with oil.
Heat a large skillet over medium heat until hot.
Add 2 sandwiches and cook until bread is golden brown and cheese has melted, pressing flat with a spatula occasionally, about 4 minutes per side. Serve immediately.
