Cherry-Arugula Salad with Almonds and Tarragon

Cherries and almonds are a classic pair and make a delicious salad combination with tart arugula and fragrant tarragon. Use any whole grain you like with this salad, but we like toothsome barley or farro.

Ingredients

    2 1/2 tablespoonsbalsamic vinegar
    1 smallshallot, chopped
    1 1/2 teaspoonsDijon mustard
    6 tablespoonsslivered almonds, divided
    1/2 poundcherries (about 2 cups), pitted and halved, divided
    2 tablespoonschopped fresh tarragon
    5 ouncesbaby arugula
    1 1/2 cupscooked whole grains (e.g. barley, farro, wheat berries, wild rice)

Method

In a blender, combine vinegar, shallot, mustard, 1 tablespoon water, 3 tablespoons of the almonds and 1/4 cup of the pitted cherries. 


Blend until very smooth, about 1 minute. 


Stir in tarragon.


Combine arugula, cooked grains and remaining cherries in a large bowl. 


Toss with the dressing and garnish with the remaining 3 tablespoons almonds.
