Cherry Barbecue Sauce
Makes about 2 cups
Time 45 min
Cherries are a wonderful alternative to tomatoes for barbecue sauce. Use this sweet and spicy sauce to baste pork, poultry or fish in the last few minutes of grilling (watching carefully to avoid burning) or serve it on the side with grilled or broiled foods.
Special Diets:
Ingredients
- 4 cups fresh cherries (about 1 pound), pitted
- 1 small onion, chopped
- 1/4 cup brown sugar
- 2 tablespoons cider vinegar
- 1 tablespoon grated fresh ginger
- 1/8 teaspoon cayenne pepper, or to taste
- 1/4 teaspoon fine sea salt
Method
Place cherries in a food processor and pulse until finely chopped.
Transfer cherries to a medium saucepan and add the remaining ingredients.
Bring to a boil, lower heat, cover and cook, stirring frequently, until cherries and onions are very tender and flavors have blended, about 30 minutes.
Cool slightly, then process in a food processor until very smooth.
Use immediately or refrigerate up to 1 week.
