Chicken Fingers with Tots

Family-favorite chicken fingers are easy to make at home. Serve these with steamed broccoli to round out the meal.
Ingredients
- 2 large eggs
- 1 1/2 cup dry bread crumbs
- 2 teaspoons herbs de provence
- 1/2 teaspoon fine sea salt
- 1 1/2 pound boneless skinless chicken breasts, cut into long 3/4-inch-wide strips
- 1 package tater tots
- Ketchup
- 1/4 teaspoon ground black pepper
Method
Preheat the oven to 400°F.
Lightly grease with canola oil or line a baking sheet with parchment paper.
In a small bowl, beat eggs.
In a large plate or shallow bowl, combine bread crumbs, herbs, salt and pepper.
With one hand, dip each chicken piece into the egg, shaking off any drips, then place in the bread crumb mixture.
With the other hand, pat the coating on both sides of the chicken and place on the prepared baking sheet.
Repeat with the remaining chicken fingers. Bake 12-14 minutes or until crisped, browned and cooked through.
Prepare tater tots according to package directions and serve with ketchup for dipping.
