These quesadillas make for a quick lunch or dinner any night of the week. Add caramelized onions or bell peppers, fresh baby spinach or thinly sliced mushrooms to these quesadillas, if you like.

Method
Heat a large skillet over medium heat, then spray with nonstick cooking spray to coat.
Add one tortilla and top with half of the cheddar cheese and half of the Monterey jack cheese.
Add half of the cilantro and half of the chicken strips and top with a second tortilla.
When cheese is starting to melt, flip quesadilla over and heat on the other side.
When both sides are toasted and cheese has melted completely, transfer quesadilla to a serving plate and set aside.
Repeat process with remaining tortillas, cheese, cilantro, and chicken.
Cut quesadillas into wedges and serve with salsa and sour cream, if you like.
