Chocolate Chip Granola Bars

These granola bars are not-too-sweet, crunchy, toasty and truly delicious -- a perfect addition to lunchboxes and snack packs. You may also want to try our vegan version: Maple and Carob Chip Granola Bars.

Ingredients
- 4 cups quick-cooking oats
- 1/3 cup canola oil
- 2/3 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1 cup chopped nuts (like almonds, walnuts, or peanuts), (optional)
Method
Preheat the oven to 350°F. Oil a 9x13-inch baking dish and set aside.
Spread oats on an ungreased baking sheet.
Bake for 15 minutes, stirring occasionally, until lightly toasted.
Allow oats to cool to room temperature.
In a large mixing bowl, combine the oil, honey, vanilla, chocolate chips, and nuts, if using.
Add the oats and toss to combine.
Spread mixture into the prepared baking dish, pressing down firmly to compact it.
Bake until golden brown, 20 to 25 minutes. Cool completely and cut into bars.
