Citrus-Salsa Salmon

This brightly flavored seafood main course is a cinch to make, combining winter's best citrus with a bright salsa. Serve with plenty of brown rice and steamed greens to soak up the good stuff.

Ingredients
- 4 (3.0-ounce) skin-on, farm-raised salmon fillets
- 1 1/2 teaspoon extra-virgin olive oil
- 1/2 teaspoon fine sea salt
- 1/2 cup 365 Everday Value® Roasted Salsa Verde
- 1 grapefruit, peel and pith removed, cut into segments
- 1 tangerine or mandarin orange, peel and pith removed, cut into segments
Method
Preheat the oven to 400°F.
Arrange salmon skin-side down on a parchment-paper-lined baking sheet.
Brush all over with oil and season with salt.
In a medium bowl, combine salsa, grapefruit and tangerine, spoon evenly over salmon and bake until just cooked through, about 10 minutes.
Serve with additional salsa on the side, if you like.
