Corn Pudding

Our slightly savory version of the holiday favorite starts with a homemade cornbread mix and highlights the natural sweetness of corn.

Ingredients
- 1 (10.0-ounce) package frozen corn, thawed
- 2 tablespoons corn meal or corn flour
- 2 tablespoons all-purpose flour
- 2 tablespoons sugar
- 1/4 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 2 tablespoons butter, melted
- 3 eggs, lightly beaten
- 1 cup skim milk
- 1 cup shredded sharp cheddar cheese
- Paprika, for garnish (optional)
- 1/4 teaspoon ground black pepper
Method
Preheat the oven to 375°F. Oil a 7x11-inch glass baking dish with canola or olive oil spray. Set aside.
In a large bowl, mix together corn, corn meal, flour, sugar, baking powder, salt, pepper, butter, eggs, milk and cheese.
Pour batter into prepared dish, sprinkle with paprika and bake until dark golden brown and a knife inserted in the middle comes out clean, 45 to 50 minutes.
