Cranberry-Pear Sauce with Vanilla

The sweetness of the pears balances the tartness of the cranberries in this vibrantly colored sauce, perfect for spooning over slices of roasted turkey.

Ingredients
- 1 1/2 pound pears, peeled, cored and diced
- 1 (12.0-ounce) package fresh cranberries
- 1 cup apple cider or water
- Juice of 2 lemons
- 1 cup sugar
- 1 vanilla bean, split
Method
Place the pears in a saucepan with the cranberries, apple cider, lemon juice and half the sugar.
Scrape the seeds from the vanilla bean into the saucepan and add the vanilla pod as well.
Bring to a simmer and cook, stirring occasionally, until the pears are tender and the cranberries have popped, 25 to 30 minutes.
Taste and adjust seasoning, adding additional sugar if desired.
Remove from the heat and chill before serving.
