Creamy Cucumber Dressing with Fresh Dill

Refreshing and creamy, this lemony cucumber dressing is equally delicious spooned over salad greens, or thickened with silken tofu and served as a dip with crudités.

Ingredients
- 1 large English cucumber, seeded and roughly chopped
- 1/2 cup 365 Everyday Value® Organic Vegan Mayo
- 1/4 cup lemon juice
- 2 tablespoons chopped fresh dill
- 1 teaspoon onion powder
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Combine cucumber, mayo, lemon juice, dill, onion powder, salt and pepper in a blender and blend until smooth, scraping down the sides and stirring as needed.
Dressing will keep in an airtight container in the refrigerator for up to 3 days.
