Creamy Lemon Cashew Frosting

Creamy cashews give this subtle yellow frosting a decadent texture and lemon zest provides a burst of tang. Decorate your favorite baked goods or use the vegan frosting as a dip for fresh fruit.

Ingredients
- 1 cup raw cashews, soaked in water overnight and drainedsoaked in water for at least 1 hour to soften; drained
- 8 pitted dates, soaked in warm water to cover for 10 minutes; reserve liquid
- 1 teaspoon pure vanilla extract
- Zest and juice of 1 lemon
- 1/8 teaspoon ground turmeric
Method
Place cashews, dates plus their reserved soaking liquid and vanilla in a high-speed blender or food processor.
Pulse the mixture several times and then blend until the ingredients are thick, smooth and creamy.
Add lemon zest, juice and turmeric, and purée.
If needed, add 1 tablespoon at a time of warm water to the blender to reach your desired consistency.
Use the frosting immediately, or store in an airtight container and refrigerate for up to 3 days or freeze for up to 1 week.
