Creamy Rice with Cottage Cheese
Makes about 1 1/2 cups

Make this creamy rice dish, flavored with fresh dill and green onions, as chunky or as smooth as you need for your little one.
Ingredients
- 1 1/4 cup low-sodium chicken or vegetable broth
- 1/2 cup long-grain brown rice
- 2 green onions, thinly sliced
- 1/2 cup whole-milk cottage cheese
- 1 teaspoon finely chopped fresh dill
Method
Combine broth, rice and green onions in a medium saucepan and bring to a boil.
Lower heat to medium-low, cover and simmer until rice is just tender, about 45 minutes.
Remove from heat and let sit, covered, for 5 minutes.
Uncover, fluff with a fork and spread rice mixture out on a large plate to cool.
Transfer rice mixture to a food processor, add cottage cheese and dill and pulse until evenly chopped.
The rice will keep refrigerated in an airtight container for up to 3 days or in the freezer for up to 3 months.
