Brightened with fresh mint, this colorful purée is a great way to get little ones to eat their fruits and veggies!

Method
Preheat the oven to 400°F.
Wrap beets snugly in foil, place on a baking sheet and roast until very tender, about 1 hour.
Transfer to a plate, discarding foil.
Halve beets and let sit until cool enough to handle.
Using a paring knife, peel and chop beets, transferring them to a food processor as you go.
Add cucumber and mint and purée until smooth.
The purée will keep refrigerated in an airtight container for up to 3 days or in the freezer for up to 3 months.
