Curried Dried Fruit Chutney

Ingredients

    1 1/2 cupsapple cider
    2 tablespoonscurry paste
    1 tablespoonlemon juice
    3 tablespoonshoney
    1/2 teaspooncrushed red chile flakes
    fine sea salt
    4 ouncesdried figs, quartered
    4 ouncesdried cranberries
    4 ouncesdried apricots, quartered
    1 tablespoonchopped fresh parsley
    1 tablespoonchopped fresh mint

Method

Place the apple cider, curry paste, lemon juice, honey, red pepper and salt in a saucepan. 


Bring to a boil. 


Add the dried fruit and simmer until liquid has reduced and dried fruits have softened, 15 to 20 minutes. 


Remove from the heat and chill. 


Stir in fresh parsley and mint just before serving.
