Dijon Chicken Salad

Turn a rotisserie chicken into a quick and easy chicken salad with the addition of some flavor and crunch. Easy to make with any leftover cooked chicken, you'll need about 4 cups of shredded meat. Serve over plenty of salad greens.

Ingredients
- 1 rotisserie chicken
- 1 celery stalk, thinly sliced
- 1 green onion, thinly sliced
- 3 tablespoons balsamic vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons finely chopped flat-leaf parsley
- 1/4 teaspoon ground black pepper
Method
Remove and discard skin from chicken.
Remove and shred cooked chicken meat into a large bowl.
Discard carcass.
Stir in celery, green onion, vinegar, mustard, parsley and pepper until well combined.
