Quick homemade snacks like these cranberry, oat and almond granola bites are simple to grab for outings or to keep tucked away at work for an energy boost in the afternoon.

Method
Put cranberries in a heatproof bowl, pour boiling water over them and let soak for 10 minutes.
Meanwhile, combine coconut and almonds in a food processor and pulse until chopped.
Transfer to a large skillet and add oats and sesame seeds.
Place over medium-high heat and cook, stirring frequently, until toasted and fragrant, 5 to 7 minutes. Transfer to a large bowl.
In the food processor, pulse cranberries with their soaking liquid until pulpy and well chopped, and then transfer to the bowl with almond mixture.
Stir until well combined. (Mixture will be hot.) Immediately cover and let sit for 10 minutes to soften.
Using your hands (dampened, if you like), firmly shape mixture into 1 1/2-inch balls and transfer to a large plate.
Cover and refrigerate until cold and firm, about 2 hours. Granola bites will keep in an airtight container in the refrigerator for up to 1 week.
