Easy Pickled Melon
Makes about 1 1/2 cups

A tasty alternative to traditional pickle relish, spoon this cantaloupe and honeydew condiment onto pork, chicken or turkey burgers for a mix-and-match burger bar, or serve alongside cheese, fruit and crackers.

Ingredients
- 2 cups (1/4-inch) cubes seeded and peeled cantaloupe and/or honeydew
- 1/4 small red onion, very thinly sliced, rinsed and drained
- 1/4 teaspoon fine sea salt
- 2 tablespoons distilled white vinegar
- 1 tablespoon sugar
Method
In a small saucepan, combine all ingredients and bring to a boil.
Reduce heat to medium and simmer gently until liquid is released and thickened, and melon is translucent and very tender, 10 to 15 minutes.
Set aside to let cool to room temperature and serve, or cover and chill until ready to serve.
