Farro Salad with Oranges and Smoked Turkey

Creamy and piquant, this hearty salad is ideal for a lunch entrée or a dinner side dish. For a delicious combo, fold in one (5-ounce) tub of baby spinach or arugula.

Ingredients
- 1 1/2 cup farro
- 1/2 cup nonfat plain Greek yogurt
- 2 oranges, zested, peel and pith removed, flesh chopped (zest and any juices reserved)
- 3 pepperoncini, stemmed and finely chopped, plus 1/4 cup brine
- 1 (7.0-ounce) package smoked turkey, chopped
Method
Put farro in a medium saucepan, cover by 2 inches with water and bring to a boil.
Reduce heat to medium-low and simmer until tender, about 25 minutes. Drain and let cool.
In a large bowl, whisk together yogurt and reserved orange zest, juice and pepperoncini brine.
Add farro, pepperoncini, oranges and turkey and fold together to combine.
Serve immediately, or refrigerate until ready to serve, up to 3 days.
