Festive Jicama Salad

This green salad is packed with colorful, crunchy veggies, making it an excellent complement to chili and other south of the border entrées.

Ingredients

    1/2 cuporange juice
    1/4 cuplime juice
    1/4 cupextra-virgin olive oil
    1/2poblano pepper, seeded and finely chopped
    3 tablespoonschopped cilantro (optional)
    1/2 teaspoonfine sea salt
    8 cupsbite-size pieces mixed lettuces, such as red leaf, green leaf, or butter lettuce
    2 cupsthinly sliced jicama sticks, (from about 1/2 medium jicama)
    2carrots, cut into thin matchsticks
    3oranges, peeled and cut into bite-size pieces
    1yellow bell pepper, cored, seeded, and cut into thin strips
    1red bell pepper, cored, seeded, and cut into thin strips

Method

Stir together orange juice and lime juice in a medium bowl, then whisk in oil until well blended. 


Add poblano, cilantro (if using), and salt. Set aside.


In a large serving bowl, combine lettuces, jicama, carrots, oranges and red and yellow bell peppers.


Add orange juice mixture and toss gently to coat. Serve immediately.
