Wasabi lends a refreshing bite to the dressing for this salad. Leftover rotisserie chicken makes the meal a snap to prepare.

Ingredients

    3 tablespoonsrice vinegar
    2 tablespoonstamari, shoyu or soy sauce
    2 teaspoonsgrated fresh ginger
    2 teaspoonswasabi powder
    1 tablespoonsugar
    1 tablespoonsesame seeds
    1 cupshredded purple cabbage
    5 cupschopped romaine
    1 cupshredded carrots
    1 cupmung bean sprouts
    3/4 cupdiced pineapple
    1mango, diced
    2 cupsshredded cooked chicken
    1 cupcooked chow mein noodles
    1/4 cupsesame oil

Method

In a small bowl, whisk together vinegar, tamari, ginger, wasabi powder, sugar and sesame seeds until blended.


While whisking constantly, pour oil into bowl in a thin stream until well blended.


In a large bowl, combine cabbage, romaine, carrots, bean sprouts, pineapple and mango.


Pour dressing over vegetable mixture and toss gently to coat.


Top with chicken and noodles and serve.
