Focaccia-Herb Stuffing

This stuffing uses premade focaccia bread for a different flavor. The apple pairs wonderfully with fresh herbs, making it a dish to prepare for holiday feasting.

Ingredients

    1 1/2 poundsfocaccia, cut into 1/2-inch cubes (about 12 cups total)
    4 tablespoonsextra-virgin olive oil
    2 cupsdiced red onion
    3celery stalks, diced
    1tart apple, peeled, cored and diced
    1/2 cupchopped fresh flat-leaf parsley
    3 tablespoonschopped fresh sage
    1 1/2 tablespoonschopped fresh thyme
    2 teaspoonschopped fresh savory or rosemary
    1 1/4 teaspoonsfine sea salt
    1/2 teaspoonground black pepper
    2 1/2 cupsreduced-sodium chicken broth

Method

Spread focaccia on two large baking sheets; let sit on the counter overnight, or place in a 300°F oven until just dried, about 15 minutes.


Place in a large bowl.


In a large skillet, heat oil and butter over medium-high heat.


Add onion and celery and cook, stirring frequently, until soft, about 8 minutes.


Stir in apple.


Add to the bread.


Add parsley, sage, thyme, savory, salt and pepper, and toss to combine.


Stir in broth and let sit a few minutes for it to be absorbed.


Stir in apple.


If using to stuff a turkey, cool completely and follow stuffing directions for your recipe. If baking separately, heat the oven to 350°F.


Butter a large baking dish and scrape stuffing into the dish.


Level top and bake until browned and crisp on top, about 50 minutes.
