French Lentils with Onion and Carrot

Look for French green lentils, which hold their shape very well after cooking, in the bulk department, where you can buy just what you need for this recipe.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 yellow onion, chopped
- 1 carrot, chopped
- 1 cup French green lentils, rinsed
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
In a medium saucepan, heat olive oil over medium heat.
Add onion and cook until softened, stirring frequently, about 5 minutes.
Add carrot, 3 cups water, lentils, bay leaf, thyme, salt and pepper and bring to a boil.
Simmer until lentils are tender, about 25 minutes.
Adjust seasoning and serve.
