Fresh Heirloom Tomato Juice
Makes about 7 cups

Drink this thick and satisfying homemade tomato juice well chilled. Spiked with fresh lemon juice, celery seed and Tabasco, it's perfectly savory alone, or use it as the ideal base for a fresh Bloody Mary.

Ingredients
- 4 large heirloom tomatoes (about 3 pounds), cored and quartered
- 3 tablespoons lemon juice
- 1 teaspoon prepared horseradish, plus more to taste (optional)
- 3/4 teaspoon fine sea salt
- 1/2 teaspoon celery seed
- 1/4 teaspoon ground black pepper
- 6 dashes Tabasco sauce
Method
In a blender, puree half of the tomatoes until very smooth; transfer to a 2-quart pitcher.
Puree remaining tomatoes and all other ingredients until very smooth, transfer to the pitcher with first batch and stir well.
Chill until cold and then serve.
