Goat Cheese and Zucchini Frittata

Serve this perfect frittata for one with a green salad on the side, if you like.

Ingredients
- 2 eggs
- 1/8 teaspoon fine sea salt
- 1 teaspoon extra-virgin olive oil
- 5 thin slices of red onion
- 1/2 medium zucchini, thinly sliced
- 1 ounce fresh goat cheese
- 1 jarred roasted red pepper, chopped
- Small handful fresh herbs such as parsley and chives, roughly chopped
- 1/4 teaspoon ground black pepper
Method
Preheat the broiler.
Whisk eggs together with salt and black pepper.
Heat oil in a small cast iron or other ovenproof skillet and cook onion and zucchini 2 to 3 minutes to soften.
Add eggs and cook 1 to 2 minutes until almost set.
Dot with goat cheese and roasted red pepper, then sprinkle with herbs.
Place under the broiler until golden, 2 to 3 minutes.
