Greek Lamb Burgers

No need to wait until grilling season to make these delicious burgers. As an alternative, pan-fry them in a bit of olive oil over medium heat until cooked to your desired doneness. Serve the burgers on whole wheat rolls with lettuce and tomatoes, if you like.

Ingredients

    6 ouncesdrained feta cheese, crumbled
    1/3 cupkalamata olives, pitted and chopped
    1/4 smallred onion, chopped
    3 tablespoonsfresh oregano leaves, finely chopped
    1/2 teaspoonfine sea salt
    1/4 teaspoonground black pepper
    1 1/2 poundsground lamb

Method

In a medium bowl, combine feta, olives, onion, oregano, salt and pepper.


Add lamb and, with your hands or two forks, lightly bring all the ingredients together, taking care not to overwork the mixture.


Form into 6 patties of even thickness.


Transfer to a lined baking sheet, cover loosely with plastic wrap and refrigerate for 30 minutes.


Meanwhile, prepare a grill for medium heat cooking or preheat the broiler.


Cook the burgers, flipping once, until cooked to your desired doneness, about 5 minutes per side for medium.
