Green Beans with Crème Fraîche and Walnuts

You can make this easy dish a day ahead and serve it at room temperature, so it’s perfect for holiday entertaining.

Ingredients
- 1 1/4 pound green beans, trimmed
- 1/2 cup crème fraîche
- 1/4 teaspoon plus 1/8 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 1/2 cup toasted walnuts, chopped
- 3 tablespoons chopped fresh chives or dill
Method
Bring a large saucepan of salted water to a boil.
Add green beans, return to a boil, and cook just until bright green and crisp-tender, about 2 minutes.
Drain and cool in cold water, then drain again and pat dry. Cut beans in half crosswise if large.
In a large bowl, stir together crème fraîche, salt and pepper. Add beans and toss until coated. (Beans can be made to this point up to 1 day ahead; cover and refrigerate.)
Serve at room temperature sprinkled with walnuts and chives.
