Rich, gooey cheese and a crackling crisp outside makes an all-time favorite sandwich. This is a simple version, but you can dress it up with a sweet-tart jam like plum or sour cherry, strong mustard or flavored mayonnaise…try curried! You could even add bacon, ham or avocado.

Method
Spread both sides of each bread slice very lightly with butter.
Layer half the bread slices with Munster, Cheddar and tomato and top with remaining bread slices, pressing gently to make sure the sandwiches hold together securely.
Heat a large skillet over medium heat.
Add sandwiches (work in 2 batches if necessary) and cook until sandwiches are browned on bottoms, 4 to 5 minutes.
Flip sandwiches over, cover the skillet and continue to cook until other sides are browned and cheese has melted, 4 to 5 minutes more.
Cut sandwiches in half and serve hot.
