Halloumi, a goat and sheep milk cheese with a distinctive "squeaky" texture, doesn't melt so you can throw it right on the grill. Delicious as an appetizer, add some olives and pita bread for a light summer entrée.

Method
Prepare a grill for medium-high heat cooking.
In a large bowl, combine cheese, zucchini and onions with 2 tablespoons of the oil.
Transfer cheese to a cutting board and quarter each piece.
Arrange cheese, onions and zucchini on a large platter.
Drizzle with remaining 1 tablespoon oil, then squeeze limes over the top. Serve warm.
