Grilled Lamb Chops with Cherry Salsa

Sweet cherries make a flavorful salsa to pair with lamb chops rubbed with sea salt and lime zest. Lamb chops might seem like a special occassion food, but they are easy enough for everyday dining.

Ingredients
- 3 cups cherries (3/4 pound), pitted and chopped
- 2 green onions, thinly sliced
- 2 tablespoons chopped fresh mint
- 1 tablespoon minced jalapeño pepper
- 2 teaspoons lime juice
- 1/2 teaspoon coarse sea salt, divided
- 8 bone-in lamb loin chops (about 2 pounds)
- 1/2 teaspoon lime zest
Method
In a medium bowl, combine cherries, green onions, mint, jalapeño, lime juice and 1/4 teaspoon of the salt.
Stir to combine and set aside.
Prepare a grill for medium heat grilling.
Season lamb chops with remaining 1/4 teaspoon salt and rub with lime zest.
Grill chops 5 to 6 minutes per side for medium-rare.
Top with salsa and serve.
