This mountain cheese, produced for hundreds of years, has an exotic "farmyard" aroma and a unique, soft texture. This sandwich is the perfect accompaniment to a hearty vegetable soup.
Method
Spread one side of each slice of bread with pesto.
Top 4 of the slices with cheese and tomatoes, then arrange remaining 4 slices of bread on top, pesto side down, to make sandwiches.
Melt 1 tablespoon of the butter in a large skillet over medium-high heat.
Reduce heat to low, then arrange 2 of the sandwiches in the skillet.
Cook until golden brown on the first side, 2 to 3 minutes.
Flip sandwiches and continue to cook until golden brown on the second side, about 2 minutes more.
Repeat with remaining 1 tablespoon butter and 2 sandwiches. Serve warm.
