Grilling watermelon brings its natural sugars to the surface and caramelizes them slightly, making it a perfect light dessert for a hot summer night. Step up your game and provide a variety of spices, such as aleppo pepper, cayenne pepper or smoked sea salt, for your guests to garnish their watermelon as they please.

Ingredients

    1/2seedless red watermelon (about 2 1/2 pounds), cut into 1-inch wedges
    2 tablespoonsextra-virgin olive oil
    1/4 teaspooncoarse sea salt, plus more for garnish as needed
    Plain Greek yogurt for dipping (optional)

Method

Prepare a grill for medium-high heat cooking.


Brush both sides of watermelon with oil and sprinkle with salt.


Place watermelon on the grill grates and grill, flipping once (tongs work best), until just caramelized and slightly softened, about 1 minute per side.


Transfer watermelon to a platter.


Sprinkle with additional salt if desired and serve with a dollop yogurt, if using.
