Ham Steaks with Fresh Pineapple Salsa

The classic combination of pork and pineapple takes a Latin twist with these ham steaks seared on a cast iron griddle and garnished with fresh pineapple salsa. Serve with a side of rice and beans. Look for packaged ham steaks in the meat department or ask for them at the deli counter. Pork chops also pair well with this salsa.

Ingredients

    2 cupsfinely chopped pineapple
    1/2 cupchopped fresh cilantro
    2 teaspoonsextra-virgin olive oil
    4green onions, both white and green parts, finely chopped
    1jalapeño pepper, seeded and finely chopped (optional)
    1lime, juice of
    1/4 teaspoonfine sea salt
    Vegetable oil
    6 (3-ounce)ham steaks
    1/8 teaspoonground black pepper

Method

Put pineapple, cilantro, olive oil, green onions, jalapeños, lime juice, and salt and pepper into a medium bowl and toss to make a salsa. Set aside.


Rub a cast iron griddle with vegetable oil and preheat over medium heat. 


When griddle is hot, add ham steaks and cook for about 2 minutes per side, or until warmed through and lightly browned on both sides. 


Transfer to plates and top with pineapple salsa.
