Hazelnut-Pear Salad with Radishes

Tangy and sweet, chewy and crunchy — this salad has it all. Dried apricots and hazelnuts add an unexpected twist, and the dressing comes together quickly in a blender.

Ingredients
- 4 cups herb salad blend
- 2 medium radishes or 4 inches daikon radish, thinly sliced
- 2 medium Asian pears, diced, divided
- 1/2 cup hazelnuts
- 1/4 cup dried apricots, thinly sliced and divided
- 1 tablespoon white wine vinegar
- 2 tablespoons Dijon mustard
Method
In a large bowl, combine salad blend, radishes, half the pears, half the hazelnuts and half the apricots. Set aside.
In a blender, place remaining pears, hazelnuts and apricots along with vinegar, mustard and 1/4 cup water.
Cover and puree until well combined and slightly thick, adding more water if needed to reach the desired consistency.
Pour dressing over salad and toss to combine. Serve immediately.
