Here are a few of our favorites: whisk with olive oil to make a dressing, drizzle on onions that are caramelizing in the pan or toss with sliced cucumbers and red onions for a simple pickle.

Ingredients

    2 cupswine, rice, or cider vinegar
    5herb sprigs (such as oregano, rosemary, tarragon, or thyme), lightly crushed
    1small, whole fresh chiles (optional)
    1 clovegarlic (optional)

Method

Put vinegar and 4 to 5 herb sprigs in a jar, seal with a tight-fitting lid, and set aside to let infuse until flavors blend, 5 to 6 days.


Strain vinegar through a fine mesh sieve into a decorative bottle and add the additional herb sprig.


Add a couple of chiles or garlic cloves, if you like.


Tie on a hand-written card with serving suggestions around the neck of the bottle.


Store in the refrigerator.
