Herbed Garlic Parmigiano Reggiano Popcorn

Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
- 1 large clove garlic, pressed through a garlic press
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried basil
- 8 cups plain popped popcorn (from 1 bag plain microwave popcorn)
- 3/4 cup grated Parmigiano Reggiano cheese, plus more to taste
Method
Place butter, oil and garlic in a small saucepan over medium-low heat.
Heat until butter melts and starts to lightly simmer.
Cook, stirring frequently, for 1 to 2 minutes, until garlic is softened and fragrant.
Add thyme and basil and stir to combine.
Remove pan from heat and set aside.
Place prepared popcorn in a large mixing bowl.
Drizzle butter mixture over popcorn while stirring with a large spoon or spatula.
Quickly toss to coat.
Add cheese and toss until well distributed.
Top with additional cheese if desired and serve immediately.
