These wholesome pancakes use honey for a light sweetness. Use a variety like orange blossom honey for a floral hint. Remember that nicely browned pancakes are the result of a hot surface and a patient spatula.

Method
Sift flours, baking powder, and salt into a large bowl.
Separate eggs, adding buttermilk and oil to the yolks. Mix well.
Slowly add wet ingredients to dry and mix. Try not to over mix, as this will make the pancakes tough.
Heat a small amount of oil in a skillet or on a griddle pan over medium heat.
Add about 1/4 cup pancake batter to the skillet and cook until bubbles form on top and edges are dry, then flip and cook the other side until golden.
Repeat with remaining batter. Serve pancakes immediately with your favorite toppings.
